When late-game actually begins

Late-game does not begin at the castle. It begins when the left resource list has enough types that the cap, not the gather speed, is the limiter. That is usually after the first prestige, once farmer bonuses, auto trading, and cheaper buildings are bought. If you are still watching wheat arrows every thirty seconds, the castle is still a decoration. University, knowledge, and expedition units come online when the kingdom can afford to staff a building that does not directly print wheat.

The university and knowledge system

The university building generates knowledge from research. Knowledge is a resource type, which means it is also a 100-milestone for prestige points. The v1.0.3 patch changed university from a curiosity into a real investment: each university now holds up to 25,000 knowledge, and university research adds +1,300 storage per level. Multiple universities stack toward the 500,000 total knowledge cap.

Build the first university when the iron chain is running and you have wood and stone to spare. Do not build it while wheat is still red from hiring. Do not treat the 500,000 cap as a target to hit. Treat it as breathing room. If you are at 400,000 knowledge and still earning, let it ride. If you are at 400,000 knowledge and nothing useful to buy, let it ride longer. The cap is not a quota.

Common late-game mistakes

Building a castle before the economy can staff it. The castle looks like the finish line. It is not. It is a storage upgrade that costs wood and stone, and those resources come from the chains you built before the castle existed.

Ignoring the university until late in the second reign. Knowledge is a prestige resource. The 100-milestone for knowledge pays a point. If you are skipping the university because wheat is more exciting, you are leaving a point on the table.

Letting expedition units replace core army units. Expedition units are an addition, not a redesign. Shield tanks and spearmen still hold the line. If you are spending iron on expedition units while the tank is still thin, the formation is wrong.
